These Gyuto knives from Kanetsune's Honsho Kanemasa E-Series are made of budget SK-95 Japanese carbon steel (formerly SK-4), heat treated to 60-61 HRC, and hand-sharpened to superb sharpness. While the edge won't hold up as well as more expensive high carbon steel like Shirogami or Aogami, the reduced carbon content and higher impurity means the blade is not only more affordable but also a bit tougher and less prone to chipping, while still retaining the great characters of a high carbon blade. It is a great knife suited for heavier-duty kitchen works such those in a busy professional kitchen.

About Kanetsune Seki 関兼常 / Kitasho 北正

The owner of Kanetsune Seki brand — Kitasho — has been making knives in pre-war Japan, in Seki City (関市) which has over 800 years of blade-making history. After the war, they established the Kitamura Shoten, which led to the current Kitasho company. The Kanetsune (兼常) brand is named after a famous sword-smith who lived in the Muromachi period around 14-15 century. Making different series of knives under brands including Kanemasa (兼正作), Honsho Kanemasa (本匠兼正作), and Minamoto Kanemasa (源兼正), Kitasho Company is on the mission of passing down Seki’s 8 centuries long knife-making techniques and traditions.

Care:

This knife is made with Japanese high carbon steel. It is not stainless, therefore you must wipe your knife dry after each use. Patina will develop over time. Rust may develop if left in prolonged contact with water or acidic food. Use a rust eraser to clean if rusts develop. Avoid cutting into bones, frozen foods, hard fruit pits.

Cutting Surface:

Recommended cutting surface: wood, rubberized boards and high-end composites, and quality plastics such as polyethene make acceptable cutting surfaces, and will help protect and prolong knife’s edge. AVOID glass, metal, countertops, and other rigid, non-forgiving surfaces.

Sharpening:

We recommend sharpening all quality Japanese knives on whetstones, as we believe they yield the best results for your knives. This knife has a 80/20 ground double bevel edge. You should sharpen at the same angle for both sides, but follow the same grind ratio of 80/20.

Good soap/sponge holder alternative
Color: White
Nice upgrade to the one I already had as it saves more space and holds a good amount of soap. It looks modern and fits my clean aesthetic. It’s a plastic material so it won’t rust easily. Overall it’s a good quality and has held up great in the past few months.

Leaks and cap is broken
Color: Transparent Grey, Color: Transparent Grey
I really like the looks and the idea. It leaks since day one, and I was too lazy to return and kept coping with it. Now the cap was broken and I cannot stand anymore. That's why you are seeing this review.

Very good all-around soap dispenser
Color: White
I tried out this soap dispenser as somebody who has just used the retail bottle with a free floating sponge for...decades. Right off the bat, what I most appreciate is the built-in sponge holder, eliminating the sponge living in a perpetual balance act on some portion of the sink, often taking a dive into the cold, murky water of a soaking dish. The holder fits a basic Scotch-Brite sponge/scour pad perfectly. The soap dispenser is much lighter than I assumed at first glance, and bigger than I thought it would be from the photos, but these turned out to be welcome attributes. It can hold nearly a full 24oz bottle of Dawn dishsoap. The color of the plastic is a little more off-white than the pictures, which was also welcome as it's less assuming on the kitchen sink. It looks like it has a bamboo base, or some other light colored wood that matches the off-white very well. I don't mean to get too deep on the appearances, but suffice to say, it's bland enough to blend in with a lot of different decors. The only reason for four stars is that the sponge holder has no way to drain, so over time, it's going to get pretty gross in there and require a clean out. However, the plastic seems pretty basic, so my hunch is that it would be easy to drill a few small holes at the bottom of the sponge holder to allow any accumulated liquid to drain out and prolong the period in between soap dispenser cleanouts. The price tag is a little steep at the time of this writing ($21.49). However, the return on that investment is the piece of mind of keeping the sponge in ONE place, always at the ready and being able to dispense a predictable amount of soap each time instead of flipping the cap of the retail bottle and inevitably getting a sinkful's worth of soap for a single coffee cup. Overall, I'm pretty pleased with this and would recommend it.

It doesn’t leak.
Color: White
I have tried a few soap dispensers and had a problem with all of them. This one is the best. It doesn’t leak. It’s sturdy. It stays clean and it doesn’t take up room on your sink. I thought it was decently priced. This is a winner.
